This is a fantastic opportunity for an experienced Sous Chef looking for an opportunity in an award winning, critically acclaimed group.-->The RestaurantBerenjak, the Iranian restaurant from Kian Samyani and JKS Restaurants, is to launch a new site in Borough Market this spring. It follows Berenjak's first site, which opened in Soho in 2018 and was awarded a Michelin Bib Gourmand in 2019.Berenjak Borough offers an expanded menu that includes several new homestyle Iranian dishes, alongside all the signature Berenjak classics. Just as the original Berenjak introduced diners to the flavours of Tehran's hole-in-the-wall eateries, the new restaurant brings the classic charcoal-grilled kebabs, such as the minced lamb koodibeh and poussin jujeh tond, for which Berenjak is best known. Many of the signature mazeh small plates from our Soho restaurant also make the jump to Borough, including the black chickpea hummus, the Panir Sabzi (Persian feta with radish, fresh herbs, and nuts), and the taftoon clay-baked sourdough seeded flatbread.The PositionAs Sous Chef, you will be responsible for ensuring the delivery of consistent, high quality and innovative dishes throughout the operation. You will play a key role in menu development, working closely with the Head Chef; you will assist in managing the overall kitchen operation, including prep schedules, stock control, budgeting and maintenance, as well as the day to day management of the kitchen team.If you have the following, then we want to hear from you:* Previous experience as a Sous Chef or Junior Sous Chef in a high quality Restaurant;* Strong awareness of trends and seasonality of produce;* A highly creative approach to your work with excellent attention to detail;* Proven ability to manage, train and motivate a Kitchen brigade;* Experience scheduling and reviewing staff rotas;* A working knowledge of health and safety, compliance and procedures;This is a very exciting opportunity not to be missed for a talented Sous Chef eager to join a restaurant group with ambitious plans.Benefits & CultureOur team is the most important part of our business, translating our passion for genuine hospitality to our guests every day.
