Job Description
  • Responsible for the set up of the line, preparation area, and buffets
  • When working AM shift breakfast line to be set no later than 7am, lunch line and soups by 11:30am
  • Responsible for having items prepped for next days shift before leaving
  • Assist with pantry area as needed
  • Assists with dish line when required including trash, and cleaning of kitchen
  • Responsible for cleanliness of kitchen refrigerators both interior and exterior
  • Responsible for setting employee lounge and assisting with it’s cleanliness at shift end
  • Responsible for the proper storage of requisitioned food items and rotation of stock
  • Responsible for the preparation of starches and vegetables for evening meal
  • Responsible for the preparation of employee meals
  • Assist with the daily menu specials
  • Responsible for the set up of taco bar and shucking shell fish when buffets are
  • Maintain adequate supply of meats, cheeses, seafood, condiments, supplies, necessary menu items (i.e. wings, hot dogs, etc)
  • Set up and maintain adequate supply of cold food items (i.e. lettuce, tomato, onion, pickles)
  • At shift end ensure adequate supply of menu items for AM shift, replenish when necessary
  • Ensure all food items are properly stored and kitchen area is clean for next shift
  • At end of PM shift ensure the fryer filter has been replaced, cook tops have been properly turned off, alto - sham is emptied of all food items, refrigerators and fish boxes are to be locked, all food items are to be properly stored before leaving
  • Ensure adequate supply of appropriate clean dishware for shift
  • Responsible for the weekly cleaning of fish drawers in accordance with all health code and sanitary regulations
  • Maintain adequate amounts of salad items and dressings
  • Prepare fresh chicken, and shrimp salads as needed
  • Ensure fresh breads for the preparation of sandwiches
  • Maintain fresh, presentable and available dessert tray
  • Assist with other areas of the kitchen operation as required
  • Performs other duties as assigned by supervisor or management
  • Maintain regular attendance in compliance with company standards as required by scheduling which will vary according to the needs of the hotel
  • Maintain proper uniform, hygiene, and appearance standards in accordance with property standards as well as health department regulations
  • Ability to effectively deal with various types of personalities and situations
