Restaurant Manager in Hitchin | £36,500 + Tronc & Bonus (up to £10k)

I am recruiting for an iconic high quality, venue in Hitchin. This role offers full ownership of the day-to-day operation and a clear path into senior management through their progression program.

The Package:

£36,500 basic + Up to 10,000 in Tronc & Bonus
WSET Level 1 & 2 training provided
Local and international supplier trips
wine at cost, meals on shift, and additional days off annually
Generous staff rates across all sites

The Role:

Lead, develop and mentor the front-of-house teams
Oversee daily operations, rotas, and training
Manage budgets, costs, and KPIs to maximize profitability
Maintain high service standards in a busy environment
Coordinate with the kitchen and senior management to drive growth

Requirements:

Current Restaurant Manager or strong Assistant Manager ready for a step up
Experience in busy, high-quality independent restaurant and bar environments
Solid commercial awareness
Strong knowledge of wine
