About the Role:
As Breakfast Manager, you’ll be the person who sets the tone for the entire day at The Imperial — creating a warm, polished and energising start for every guest. This role blends operational precision, confident leadership and an elevated service vision. You will oversee a morning experience that feels calm, modern and seamless, whether the day begins with a perfectly poured flat white, a beautifully presented à la carte plate or a fresh looking buffet that never dips in quality.
What You’ll Be Doing:
- Deliver a warm, modern welcome and confidently present menus
- Maintain pace, presentation and photo-ready dish standards
- Own guest recovery with quick, gracious solutions
- Manage terrace seating and weather‑responsive setups
- Lead daily line‑ups, briefings and operational flow
- Oversee mise‑en‑place, bakery, coffee bar and post‑service resets
- Coach and develop a confident, guest focused team with a strong sense of service identity
- Train barista craft, service sequence and storytelling
- Maintain breakfast product expertise and presentation standards
- Partner with kitchen and bar on seasonal specials
- Deliver revenue and GP targets, manage labour and stock
- Ensure accurate reservations, POS use and shift reporting
- Lead food safety, allergens, hygiene and terrace safety
- Support brand and marketing initiatives for morning activations
- Reduce waste through smart prep and champion responsible sourcing
- Collaborate across departments to deliver seamless guest experience
- Monitor guest feedback across online platforms and react with timely, thoughtful solutions that reinforce our service standards
Who You Are:
- Experienced leader in premium breakfast/brunch or hotel restaurant settings
- Strong floor leadership with pace control and guest recovery skills
- Commercially smart with GP, stock and labour management experience
- Skilled people manager with strong product knowledge
- POS and reservations system experience
- Food Safety Level 2 & Allergen Awareness
