This is an exciting opportunity to nurture your passion for wine, heading up the bar operations in a wine-focused, chef-led restaurant. You will curate the drinks list and drive knowledge and confidence for your team and guests.

If you have previous experience as Sommelier or in a wine focused restaurant, please apply! If you simply have interest in wine and have not yet completed WSET certifications, you will have the opportunity to, if you are successful in this role!

WHAT YOU'LL DO

• Curate and update wine lists reflective of the business vision, working closely with the head chef who runs a daily changing menu.
• Develop all staff in wine knowledge and service, building their confidence to deliver an outstanding experience as well as drive wine sales (volume and spend) through training and incentives.
• Lead wine service in shifts.
• Host food and wine events.
• Oversee the smooth running of the bar during peak service hours.
• Build and manage a medium sized team of bartenders.
• Control stock, ordering, and conduct periodic inventory counts and audits to optimize par levels, meet budget expectation and efficiently manage bin ends and vintage changes.

WHAT YOU'LL BRING

• Passion for the highest standards in food and drinks, accompanied by a solid understanding of world wines (WSET beneficial but not essential!).
• Eagerness to make an impact on the success of the business.
• Experience with staff training and development.
• Influential and excellent communication skills.&
• Awareness of market trends, ability to create and innovate existing drink lists alongside our Head of Beverage&
