Job Description
Catering Manager Salary: £32,000-£35,000 Leisure Attraction Guildford

Hours: flexible 48 hrs per week to include some evening and weekend working

Our client is a central leisure attraction in Guildford. It is one of the UK's leading producing and receiving playhouses with two auditorium (Main Stage 586 seats; Mill Studio 80 seats), a restaurant and cafe, bars and a riverside garden. Situated in the heart of Guildford on the banks of the River Wey.

Department Description
The Catering Function operates the main Restaurant, a café, a Top Bar, Foyer Bar and private Club. These areas provide a variety of food and drink options to both patrons attending
theatre events and to visitors looking for a destination for coffee, afternoon tea or a more substantial meal. They also offer a range of room hires and catering services to organisations or guests wishing to book either a corporate or private function.

Main Duties & Responsibilities

Customer Service -
* To ensure that customer needs are addressed and attended to within agreed time frames.
* To ensure service is always of a high standard in all outlets, and to manage any issues that might come up during daily service operations.
* To preserve and continue to build excellent levels of customer service.
* To be a front line contact for the client experience and create a positive and enthusiastic first impression.

Menus -
* To design and update menus for all the outlets working with the chef and assisting with menu planning and to ensure accurate costing and appropriate pricing strategies.
* Attend cook offs for new menus
* To keep up to date with latest food trends and customer preferences
* To liaise with suppliers to get best value for the Theatre, and to regularly review supply chains.

Managing Staff -
* To lead the catering team by example, ensuring appropriate attention is made to appearance, cleanliness and approach-ability at all times.
* To have responsibility for the recruitment, training and retention of all catering staff.
* To compile & communicate weekly staff rotas.
* To ensure effective communication and nurture an environment with emphasis on motivation, teamwork and willingness to take responsibility for area and service levels.

Business Acumen -
* To be responsible for purchasing all bar stock.
* To be responsible for stock and storage control ensuring minimal wastage.
* To lead and manage all liaison with suppliers.
* To regularly review supplier invoices to ensure accuracy and agreement between delivery notes and goods received.
* To schedule and facilitate the carrying out of all F&B stocktakes, with prompt notification of values to the Finance Department.
* To regularly review, at least monthly of all relevant financial reports highlighting and reporting problems with GP percentages.
* To ensure careful monitoring and control of all catering staff costs.
* To ensure timely and accurate planning to for all catering staffing levels, based on projected and actual attendance figures.
* To assist in annual budgeting of income and expenditure (including wage budgets).
* To provide input and ideas into marketing initiatives, business development strategies and to assist in the promotion of agreed initiatives/strategies and to monitor response rates.
* To facilitate the achievement of maximum profitability of the catering operation, at all times.
* To assist in developing relevant business strategies at the Theatre, to explore new opportunities and maintaining relationships with existing clients.

Health and Safety -
* To be responsible for the Implementation and adherence to all current, relevant legislation.
* To be responsible for checking all kitchen equipment and relevant paperwork regularly, notifying any concerns to line managers.
* To maintain the highest standards of hygiene and is always run within the EHP
guidelines to preserve the five star rating that has been achieved.

Events -
* To attend meetings with potential customers, as and when required.
* To liaise with all necessary departments regarding costings and invoicing for functions.
* To keep up to date with all functions recorded onto the Booking Diary.
* To promote, plan, organise and deliver all functions and events, as and when required.
* To promote the business services to both existing and new clients through a proactive approach

Catering Manager - Person Specification

* Excellent verbal and written communication skills
* The ability to manage your time effectively and meet deadlines
* Passionate about whatever field you work in
* Open and welcoming of all patrons, colleagues and people with whom your role brings you into contact within the organisation

* Proven managerial experience in leading a catering team.
* A desire to achieve operational excellence, providing professional and courteous service to our customers and visiting companies.
* The ability and confidence to deal with issues in a calm and efficient manner.
* Excellent verbal and written skills, telephone manner and face-to face interaction with customers and staff,
* Strong leadership skills ensuring staff are well managed and feel valued in the roles they do.
* Highly organised and competent in handling stock control and ordering.
* Knowledgeable about the F&B industry.

* A strong interest in working to identify both new business opportunities and ways to improve profitability of current operations without a detrimental effect on the customer
