Job Description


Includes competencies in basic bakery packing, palletizing, dumping, decorating/topping bars and brownies, sonic cutter loading and basic paperwork.  Follows GMP and HACCP guidelines, personal practices/personal processing practices while on the production floor.


#1 Basic Bakery Packing

Inspects product for quality

Maintains speed of clamshell/container line at rate of 10 racks per hour

Efficiently places product in appropriate packaging    

Pulls racks out of cooling area in numerical order (leftovers should be done first).


#2 Palletizing

Selects good pallets from shipping dock

Reviews spec sheet for pallet stacking guide

Palletizes boxes correctly, safely and orderly

Overlooks all cases, and whole pallets for accuracy and quality (this entails,

correct date codes, labels and unpunctured cases)

Pulls pallets into freezer


#3 Dumping (De-panning)

Pulls racks from the cooling area in numerical order

Inspects product for quality

Dumps muffins onto table as needed at a rate of 10 racks per hour

Crumbles product using appropriate machine (Crumbler/Warthog)


#4 Decorating/Topping

Sets up Topping & Packing areas

Removes racks from cooling area (date codes as needed)                            

Tops brownies and bars in accordance with spec

De-frames trays


#5 Sonic Cutter Loading

            Inspect product for quality

            Power up, select program dictated by spec and operate the machine.


#6 Basic Paperwork

Able to make accurate paperwork notations on line's paperwork.



  • Must be able to push/pull the oven racks occasionally.  Each rack weights about 450 pounds. 
  • Should know simple arithmetic.  Must be able to add volume and weight.
  • Should have the ability to read and follow instructions and recipes. 
  • Must be able to troubleshoot problems and work well in a team environment. 
  • Must be able to lift 18-50 pounds frequently (depending on what product is being made and what position working)

Must achieve certification/proficiency on all equipment:

Bowl lift, pallet jack, tape machine, metal detector, unifiller icer, conveyor belts, butter chipper, toppers, kettles/pump, sonic cutter, print and apply and scale.


Additional Expectations

Each position has expectations to set up portions or all of the line, changeover cleaning, maintaining cleanliness throughout the shift, and end of shift cleaning. Each position has expectations to be a team member and help others (on any line) as time allows. Each position is to communicate with appropriate team members any safety issues, food safety issues, quality issues, maintenance issues and/or waste issues. Each team member is empowered to stop the line should personal safety, food safety or quality standards be in danger.
