General Manager - Multi Site Venue

South West London

Salary £70,000 p.a. - £58,000 base plus bonus based on EBITDA of £12,000.

We are seeking an exceptional General Manager to take full ownership of a £2.6m London venue operating late licence with a strong events pipeline.

This role is for a someone who has already run complex, high-revenue businesses and delivered real profit. You will have full P&L accountability and complete control of operational performance. If you are motivated by ownership, standards, and commercial impact, this role offers genuine scope.

We are looking for a General Manager who can:

  • Take immediate control of performance.
  • Tighten discipline across operations.
  • Drive EBITDA growth.
  • Build a strong, accountable management team.
  • Elevate standards across bar, kitchen and events.
  • You will lead a high-energy late-night venue where commercial sharpness and operational control are non-negotiable.

Responsibilities for General Manager

Financials

  • Complete P&L Ownership
  • Total accountability for revenue, margin, labour, and EBITDA.
  • Weekly forecasting and commercial planning.
  • Labour modelling aligned to late-night trading.
  • Cost control and supplier management.
  • Profit improvement initiatives.
  • Delivering budget and stretch targets.
  • You are responsible for the numbers.

Operations

  • Full control of front-of-house, bar, kitchen and events teams.
  • Leading high-volume, late-night trade.
  • Enforcing standards and discipline.
  • Maintaining energy and quality during peak trading.
  • Immediate correction of operational failures.
  • The venue runs to your standards.

Events & Revenue Leadership

  • Direct oversight of the events team.
  • Driving pipeline, conversion and pre-booked revenue.
  • Ensuring events deliver both experience and margin.
  • Proactive business development mindset.
  • This is a commercially driven, events-led business.

Kitchen Oversight

  • Direct management of Head Chef.
  • Delivering food GP targets.
  • Kitchen labour and cost control.
  • Consistency, hygiene and execution standards.
  • The kitchen is part of your P&L.

Compliance & Licensing

  • Full responsibility for licensing compliance.
  • Health & Safety ownership.
  • Incident management.
  • Local authority relationships.
  • Zero tolerance for avoidable risk.
  • You protect the licence.

Leadership & Talent Development

  • Recruit, train and retain strong managers.
  • Set clear KPIs and accountability.
  • Develop future leaders.
  • Address underperformance decisively.
  • Create a disciplined, professional culture.
  • You build the team. You set the tone.

Requirements for General Manager

  • Has successfully run £2m+ London venues.
  • Thrives in late-night, high-energy environments.
  • Understands margin, labour control and EBITDA deeply.
  • Has led events-driven businesses.
  • Is commercially aggressive but operationally disciplined.
  • Commands respect without ego.
  • Wants ownership, not supervision.
