ESSENTIAL ELEMENTS - Line Cook
Set-up a la carte line for designated meal period. Prep, prepare, handle and store all food product for functions, dining room buffets, and employee meals according to safety and sanitation standards. Complete all prep needed for the a la carte line. Checks function sheets and prepare food items needed for banquets according to Banquet Event Order specifications and hotel quality and portion standards. Checks daily productions charts and fills as needed. Strictly use portion control. Follow all recipe specifications and plating techniques. Properly store and label food items to ensure quality and sanitation standards. At end of shift, place all food items in clean containers. Place seafood in clean hotel pan and re-ice. Log all information needed on meat charts. Heat all food items to sanitation standards. Ensure cleanliness of all food and non-food storage areas for line, cooking areas, and preparation areas. Regularly clean, sanitize and maintain all line equipment. Filter or change oil in fryolator. Sweep and mop floors. Safe and proper use of all chemicals associated with the job.
ESSENTIAL ELEMENTS - Banquet Cook
Preps, prepares, handles and stores all food product for functions, dining room buffets, and employee meals according to safety and sanitation standards. Checks function sheets and prepares food items needed for banquets according to Banquet Event Order specifications and hotel quality and portion standards. Checks daily productions charts and fills as needed. Prepares all soups and sauces. Responsible for cleaning and sanitizing the banquet work area and walk-ins. Checks with Chef on all cleaning and closing procedures ate end of each shift. Safe and proper use of all chemicals associated with the job.
Perform other duties as required or directed.
KNOWLEDGE, SKILLS AND EXPERIENCE
Minimum level: High school diploma preferred. Three to five years of related experience required. Must complete proper food handling and sanitation training.
Interpersonal and customer service skills: Ability to operate within a fast paced, ever changing environment while maintaining a positive and cheerful attitude. Good communications skills.
Equipment used: Ovens, flat tops, fryolator, steam table, grill, kitchen knives and utensils
Requires extensive use of fingers and hands for food preparation. Push and pull carts and racks. Carry and lift Lexans. Must be able to hear and speak to facilitate communication with department and restaurant employees. Requires constant standing, walking, stooping, and reaching.
