Position will be responsible for food production and kitchen management. Working directly with Food & Beverage Administration and Management in all aspects of Encore Food & Beverage Division at the Wicomico Youth and Civic Center. Responsibilities will include, but not limited to, food preparation, expediting food for all food related events, inventory control, staff supervision and training, adherence to safe food handling procedures, and all related cleaning tasks.
1- Food production for Encore Food & Beverage Division.
2- Follow and enforce standards for personnel performance, safe food handling, and customer service.
3- Strong attention to controlling food and labor costs.
4- Knife Skills and ability to operate all kitchen equipment.
5- The ability to produce food within time restraints.
6- Responsible for cleaning of all kitchen and kitchen equipment.
7- Follow house recipes and menus.
8- Receiving and storing of all food orders.
9- Adhering to all Wicomico County, Maryland Personnel Policies and Procedures
10- Front of house responsibilities will be, but not limited to, room set up, carving stations, overseeing replenishment of food on buffet stations.
11- Perform related work as required by management.
12- Adhere to a spoilage disposal policy.
13- Creating and submitting a usage report within two (2) days after each Foodservice event.
14- Assist with inventory reports on a monthly basis in a timely and accurate manner.
15- Safeguard supplies and materials to prevent theft. (All supplies must be kept locked).
16- Food and product invoices must be submitted immediately Food Service Administration.
17- Training & mentoring of kitchen staff.
